ABOUT THE WINE
Picked over many days from late September to late October and from many different vineyard sites in order to showcase the best quailty fruit from the Okanagan Valley. Our Pinot Gris was whole cluster pressed to extract aroma and flavour components and cool fermented in stainless steel to preserve the character and the freshness of the fruit.
TASTING NOTES
Clear bright colour with fresh, clean aroma of spring blossoms, sweet lemon, apple, pear and yellow plum. This lighter fashioned Rooster has zippy fruit flavours of green apple and medley of citrus. A touch of spice and refreshing notes of green apple, early yellow plum nd lemon linger on the finish. Drink now while young and fresh.
FOOD PAIRINGS
Serve with delicate pan-fried fillets of fish, seared scallops; light cream sauces on pasta and seafood; roasted chicken with summer squash.
