ABOUT THE WINE
The grapes are hand-picked from select vineyards and lots which exhibit the potential to go into our top wines. The individual lots are fermented in open top fermenters, hand-punched daily to break the surface cap, and undergo malolactic fermentation and aging in newer French and American oak barrels for 14 months. Limited production of 494 cases.
Garnet colour with a 'Rooster' ruby red rim. An intriguing bouquet of sweet cherry, cedar chest, cigar box and baking spice. This is a medium to full-bodied Merlot with velvety tannins and food-friendly acidity. Fruit flavours of cherry and plum dusted with baking spice caress the palate. The juicy lingering finish shows notes of red berries, cherry and spice. .
Excellent with grilled red meats; winter stews; braised meats; mushroom risotto; beef brisket; rich mushroom lasagna; game birds such as pheasant and quail; duck breast with red wine cherry sauce; steak and kidney pie; two year old cheddar and Asiago cheese.
